Here's a special edition of an American classic that clocks in at a preparation speed of five minutes or less!
Ingredients:
1 6oz. can tuna, drained
1 egg white, beaten
2 tbsp. oatmeal (quick or regular)
2 tbsp. onion, diced (or ¼ tsp onion powder)
¼ tsp garlic powder
salt or salt substitute & pepper to taste
2 tbsp. reduced-fat mozzarella cheese (optional)

Suggested Alternatives:
See "Tuna Time" for more ideas on how you can season your tuna melt patties.
Directions:
Mix all ingredients except cheese together in a small bowl. Heat a small non-stick frying pan over medium heat and spray with non-stick cooking spray. Make two small patties by spooning ½ of tuna mixture into each side of the pan and lightly pressing with fork to flatten into a patty. Cook until both sides are brown. Top with 1 tbsp. cheese and serve alone, on top of light bread, or with sides of choice.

This looks like a pretty good one. High protein, with oats and egg whites.

Haven't tried this one personally, but if you do tell me how you like it.

Re: Tuna and Rice Recipe?

Yes, my mother makes a similar recipe except with egg noodles. Replace the noodles with brown rice & should be pretty good!

TUNA RICE HOTDISH
Pre-cooked rice
1 (6 oz.) can tuna
1 can cream of chicken soup
1 sm. pkg. frozen peas, thawed and cooked just until done

Mix cream of chicken soup, rice, peas, and tuna together in a baking dish. Heat thoroughly in the oven at about 375 degrees for about 30 or so minutes. May serve immediately. Serves 3 to 4.

***those cruncy onion toppers make a great topping to the dish. Add them the last 5 minutes in the oven.

Re: Tuna and Rice Recipe?

One of my favourites is
a tin of tuna
pasta
cheese sauce
cheese sprinkled on top.

cook the pasta then place in a oven proof dish. then mix the tuna and cheese sauce with the pasta and put in the oven for about 15-20 minutes. adding the grated cheese when cooking is finished.

sorry don't have any idea on the amount of ingredients i use or specific cooking times etc.

I basically live off fish/chicken/pasta/rice recipe's. One I like, I cook wholeweat pasta for 10 mins, then add plum tomatoes and cook light for 3-5 mins, then add 2 tins of Tuna in sunflower oil and eat. Simple and healthy!
